The soft intertidal — where almost every gathering quarry in this catalogue actually lives, where a great deal of bait comes from, and the ground on which people in Britain are cut off and drowned.

Tides and being cut offCan cause serious injury or death

A wide, nearly level flat floods across its whole surface at once rather than advancing as a visible edge, and the drainage channels fill before the flat does — so the route back is under deep, fast water while the ground underfoot is still dry. People are killed on British flats by this every few years, usually without having gone far, and usually having watched the tide the whole time.

What reduces it: Know the time of low water and the tidal range before setting out, and whether it is springs or neaps. Identify the channels between you and the shore on the way out. Set a turnaround TIME and keep it. Never go out in fog. Carry a means of calling for help that survives immersion, and tell somebody where you are.

Worse when:

  • Spring tides, when the range is greatest and the flood fastest
  • Fog, which removes every landmark on featureless ground simultaneously
  • Strong onshore wind, which raises the water above the predicted height and brings it in early
  • Darkness, and unfamiliar ground

Drowning and immersionCan cause serious injury or death

Soft fine sediment can trap a foot or a leg and is not visually distinguishable from firm ground beside it. A trapped person on a flooding flat is in immediate life-threatening danger, and bystanders who go to help routinely become a second casualty.

What reduces it: Test unfamiliar ground before committing weight, particularly near channels and freshwater seeps. If you begin to sink, spread your weight and do not struggle. If somebody else is stuck, call the coastguard rather than going to them — mud rescue needs equipment and training that bystanders do not have.

Worse when:

  • Recently shifted channels and freshwater seepage
  • Working alone
  • A rising tide, which converts a difficult situation into a fatal one

Contamination and toxins in the catchCan cause serious injury or death

Filter-feeding shellfish gathered from a flat concentrate marine biotoxins and microbiological contamination out of the water they sit in. Neither cooking nor the animal's appearance, smell or taste removes a biotoxin, and harvesting areas are classified and opened and closed on monitoring results a gatherer cannot see.

What reduces it: Treat the classification and current status of the area as the deciding fact, obtained from the food safety authority and the local authority for that shore. Estuarine flats receiving urban runoff and sewage discharge, and any shore after heavy rain, are the specific cases to avoid.

Worse when:

  • After heavy rain, when combined sewer overflows operate
  • During or after a harmful algal bloom, which may leave no visible trace

Slips, trips and fallsCan cause injury needing treatment

Pacific oyster reef establishing on flats and their margins presents fields of immovable, extremely sharp shell. Falls onto it, or wading barefoot across it, produce deep contaminated lacerations.

What reduces it: Sturdy footwear with a firm sole, and gloves where hands go down. Do not wade barefoot on shores where oyster reef has established.

Worse when:

  • Shores where reef has appeared recently and people are not expecting it

A tidal flat looks like the emptiest place on a coast and is one of the most productive.

IT IS SEDIMENT, GRADED BY ENERGY. Coarse sand where there is wave action, fine sand and then mud as shelter increases, with the finest material at the head of an estuary. What lives in it is decided almost entirely by that grading, which is why cockles are in one place and lugworm in another and neither is a matter of luck.

ALMOST EVERYTHING FISHINGHQ DESCRIBES GATHERING LIVES HERE. Cockles, razor clams, brown shrimp, peeler crab, lugworm, ragworm, and — at the margins — mussels and oysters on any hard surface within it. The catalogue described how to collect all of them and had no record of the ground.

IT IS ALSO THE MOST IMPORTANT BIRD HABITAT ON THE BRITISH COAST, which is why so much of it is protected, and it feeds the estuary's fish: bass, flounder, mullet and juveniles of a long list of species move onto a flooding flat to feed on exactly what a gatherer is there for.

AND IT KILLS PEOPLE. Two mechanisms, both specific to this ground: a flooding tide that covers a wide flat area at once rather than advancing as an edge, and soft sediment that traps a foot and does not look different from the sediment beside it. Britain's most notorious gathering tragedy happened on a flat, and the coastguard attends incidents on them every year.

What characterises it

Soft sediment exposed by the tide, ranging from clean coarse sand on the open coast through fine sand to soft mud in sheltered estuaries and behind barrier systems. The defining physical variables are grain size, drainage and wave exposure, and they vary together: the more sheltered the site, the finer the sediment and the more organic material it holds.

A flat is drained by a channel system that fills before the flat itself does, and reworks position between seasons and after storms. Surfaces that look uniform are not: firm sand, soft sand and genuinely mobile mud can lie within a few metres of one another with no visual difference between them.

Tidal range decides how much of it there is. On a big spring range — the Severn, Morecambe Bay, the Wash, the Solway — the exposed area at low water is measured in square kilometres and the water returns across all of it at once.

What lives there

Extraordinarily productive and dominated by what is buried. Microscopic algae on the sediment surface and organic material carried in by the tide support very high densities of infauna: lugworm, ragworm, cockles, razor clams, tellins, amphipods and a long list of others, at biomass densities that exceed almost any other British habitat.

That infauna feeds two groups. On the ebb, waders — oystercatchers, curlew, knot, dunlin, godwits — take it, and British and Irish estuarine flats support internationally important populations of exactly these birds, which is why so many of them carry conservation designations. On the flood, fish move up onto the flat to do the same thing: bass, flounder, mullet, plaice, gobies and the juveniles of many species feed across ground that was dry an hour before.

Brown shrimp sit in the middle of that web as both a predator of juveniles and a food for adults. Estuarine flats also function as nursery grounds for a substantial share of the fish an angler will later catch elsewhere, which is why damage here is felt somewhere else.

Through the year

The invertebrate life is present year-round and its accessibility is not. Spring and summer bring the animals closer to the surface and into shallower water — brown shrimp move onto the flats with warmth, razor clams and cockles are more workable — and the biggest low spring tides of the year expose ground that is otherwise permanently covered.

Winter storms rework the sediment, move channels and can strip or bury whole shellfish beds. Cold pushes mobile species off the flat into deeper water.

Birds invert the pattern: the internationally important numbers are winter numbers, when migratory waders arrive, so the season of least gathering activity is the season of greatest disturbance sensitivity.

The two things that kill people on a flat

Tidal flats are the ground on which the coastguard's most difficult British inshore rescues happen, and the mechanisms are specific enough to be worth stating separately.

THE FIRST IS CUT-OFF, AND IT IS NOT WHAT PEOPLE PICTURE. On a steep beach the tide advances as a visible edge and you can watch it. On a wide flat, water arrives across the whole surface almost simultaneously — the flat is nearly level, so it floods everywhere at once. Worse, the drainage channels fill BEFORE the flat does, which means the route back is under water while the ground you are standing on is still dry.

So the sequence that catches people is: walk out on a falling tide across dry ground; work for longer than intended; turn to come back; find a channel between you and the shore that was not there an hour ago and is now too deep and too fast to cross.

THE SECOND IS SOFT GROUND. Fine sediment, particularly where a channel has recently moved or where freshwater seeps through, can be soft enough to trap a foot or a leg, and it does not look different from firm ground next to it. A trapped person on a flooding flat is in immediate danger, and — this is the part that turns one casualty into two — people who go to help get stuck as well.

WHAT ACTUALLY REDUCES BOTH.

KNOW THE TIDE BEFORE YOU GO OUT: the time of low water, the range, and whether it is springs or neaps. A big spring range means more ground and a faster flood.

SET A TURNAROUND TIME AND KEEP IT. Not a distance; a time.

KNOW WHICH CHANNELS ARE BETWEEN YOU AND THE SHORE, and check them on the way out rather than on the way back.

NEVER GO OUT IN FOG. Fog on a flat removes every landmark simultaneously and people walk in the wrong direction with complete confidence.

CARRY A MEANS OF CALLING FOR HELP that survives immersion, and tell somebody where you are and when you will be back.

AND IF SOMEBODY IS STUCK, CALL — DO NOT GO. Coastguard teams have mud rescue equipment and training. Spread your weight, do not struggle, and stay calm; struggling in soft sediment makes it worse.

ONSHORE WIND RAISES THE WATER ABOVE THE PREDICTION, which is not a detail: a strong onshore blow can bring the tide in higher and earlier than the table says.

What is buried here, and why the ground decides which quarry you find

Almost nothing on a flat is visible, and everything about where to look follows from sediment grade.

CLEAN COARSE SAND, OPEN COAST, LOW SPRING TIDES: razor clams, near the low water mark, betrayed by keyhole-shaped depressions in the surface.

FINE SAND AND MUDDY SAND: lugworm, marked by the familiar casts and, a few inches away, the blow hole that gives the head end. Brown shrimp over the same ground in the shallows, buried by day.

MUDDY SAND AND MUD IN ESTUARIES: ragworm, cockles in dense beds where the sediment and salinity suit them, and peeler crab under any stone, weed or debris.

ANY HARD SURFACE WITHIN THE FLAT: mussels, and increasingly Pacific oysters — which cement into reefs sharp enough to be a genuine injury hazard on ground people wade barefoot.

AND THE SURFACE TELLS YOU. Casts, blow holes, keyholes, siphon marks, the trails of moving animals and the shells of dead ones are the whole of the information available, and reading them is what separates somebody who finds shellfish from somebody who digs holes.

TWO THINGS THIS PAGE WILL NOT DO.

IT WILL NOT TELL YOU WHETHER THE ANIMALS ARE SAFE TO EAT. Filter-feeding shellfish concentrate marine biotoxins and microbiological contamination out of the water they sit in, cooking does not remove a biotoxin, and harvesting areas are classified and opened and closed on monitoring results a gatherer cannot see. The food safety authority and the local authority for that shore are the only sources.

AND IT DOES NOT ADDRESS ACCESS OR PERMITTED TAKE. A very large proportion of British and Irish intertidal flats carry conservation designations, several have byelaws specific to bait collection and shellfish gathering, and access, permission and permitted methods vary between and within administrations. That is a matter for the authority responsible for the shore.

WHAT IS WORTH SAYING ABOUT DISTURBANCE, because it is a fact rather than a rule: the flats that hold the quarry are the flats that hold the birds, the internationally important bird numbers are winter numbers, and a person walking across a flat moves feeding birds off ground they need. Backfill dug holes, keep to worked areas, and treat a flock lifting off as information.
