A large, fast Seriola of Japanese and Korean waters, of major food and aquaculture importance, and known by different names at each stage of its growth.

Japanese amberjack is the great pelagic sport and food fish of East Asian waters — a powerful Seriola that schools, hunts fast and reaches a substantial size, and one of the most valuable aquaculture species in the world.

It is the classic Japanese shussero-uo: the name changes as the fish grows, running through mojako, hamachi, warasa and finally buri, with regional variations. Those names are not synonyms for the same thing — they refer to a specific size and season of fish and carry culinary implications, which is why the catalogue records them as terminology rather than as aliases of equal weight.

It is separated from the yellowtail kingfish of southern waters by fin-ray counts and by range rather than by any obvious field character.

Lifecycle and reproduction

Fast-growing and long-lived, undertaking substantial seasonal migrations along the Japanese archipelago. Juveniles associate with drifting seaweed, which is the basis of the traditional collection of wild fry for aquaculture.

Spawns in warm months in offshore waters, with larvae and juveniles associating with drifting weed rafts before recruiting to coastal waters.

Feeding and senses

A fast schooling piscivore taking anchovy, sardine, squid and other pelagic prey, driving bait schools in open water and against structure. Feeding is highly synchronised within a school and often brief, which is why anglers work fast and move on rather than fishing a mark out.

How Japanese amberjack are fished, and why

A fast pelagic predator that hunts shoaling baitfish in open water and around structure, and every method is built around speed and depth.

JIGGING — and mechanical jigging in particular, which developed largely around this fish — works because amberjack hold deep over structure and respond to a fast vertical retrieve that imitates a fleeing baitfish. The technique's whole character, heavy short rods and rapid retrieve, comes from this species.

TROLLING covers open water where the fish is patrolling rather than holding.

POPPING AND STICKBAITING works when the fish drives bait to the surface, which is a visible and predictable event.

AND THE TACKLE FOLLOWS THE FISH. Amberjack run hard and downwards towards structure, so the gear is heavy for the size of fish. That is a consequence of where the fight happens rather than of the fish's weight.
