Parasites in fish, and what freezing actually does about them

Parasites in wild fish are normal, usually harmless once the fish is cooked, and the reason raw fish is frozen first. The conditions that reliably kill them are specific, published, and mostly beyond a domestic freezer.

Parasite larvae present in wild fish can cause illness when the fish is eaten raw, cured, cold-smoked or lightly marinated. Cooking the fish through eliminates the hazard; brining, pickling, candling and trimming reduce it without removing it.

What reduces it: Cook fish through if there is any doubt. For raw preparations, freeze first under the conditions the FDA states as sufficient, noting its own caveat that they may not suit fish thicker than about six inches and that most domestic freezers do not reach the lower temperatures. Discard heavily infested fillets.

Worse when:

  • Large, old, predatory fish, which accumulate more
  • Thick pieces, where a domestic freezer may not reach the stated conditions throughout
  • Freshwater fish eaten raw, where the parasite route differs from the marine one

Finding something in a fish you have just filleted is alarming and is almost always ordinary. Wild fish carry parasites; that is a fact about wild animals, not about that fish, that water, or your handling of it.

WHAT IS ACTUALLY THERE. The FDA guidance names the groups "of most concern in seafood" as the nematodes or roundworms — Anisakis and Pseudoterranova being the ones a European or North American angler meets — the cestodes or tapeworms of the genus Diphyllobothrium, and the trematodes or flukes. What is usually found in a cod, whiting or pollack fillet is an anisakid nematode: a pale, coiled, thread-like worm a centimetre or two long, most often in or near the belly flaps.

COOKING SETTLES IT, AND THE GUIDANCE IS UNAMBIGUOUS: "the process of heating raw fish sufficiently to kill bacterial pathogens is also sufficient to kill parasites." A fish cooked through is not a parasite question. Essentially all of the associated human illness comes from raw, cured, cold-smoked or lightly-marinated preparations — the FDA's list of implicated products is ceviche, sashimi, sushi, lightly-brined herring, cold-smoked fish and undercooked grilled fish.

FREEZING IS THE OTHER CONTROL, and it is the one place in this subject where a published figure transfers intact from a processor's guidance to a home freezer. The FDA states three regimes as sufficient to kill parasites; they are quoted in full below, together with the two caveats that decide whether a domestic freezer can actually meet any of them.

WHAT DOES NOT WORK, PER THE SAME SOURCE. "Brining and pickling may reduce the parasite hazard in a fish, but they do not eliminate it" — larvae have survived 28 days in a 21% salt brine. Trimming belly flaps and candling reduce numbers and "do not completely eliminate the hazard". Lemon juice does nothing, and nor does the belief that a very fresh fish is safe raw, which has the mechanism backwards.

FRESHWATER FISH ARE NOT EXEMPT AND ARE DIFFERENT: there, the guidance notes, trematodes "enter the fish through the skin rather than in the food". The record on eating freshwater fish covers it.

WHAT TO DO WITH THE ONE YOU FOUND. Remove it and cook the fish, or discard the affected part. A fillet with a heavy infestation through the muscle is one to discard on grounds of appetite. And what not to do: do not try to identify what you found, do not try to work out what it might mean if you have already eaten something raw, and do not treat a website as the place to settle either question. Anybody who becomes unwell after eating fish should speak to a doctor.

Whether a domestic freezer can actually do this

The FDA states that "freezing and storing at an ambient temperature of -4°F (-20°C) or below for 7 days (total time), or freezing at an ambient temperature of -31°F (-35°C) or below until solid and storing at an ambient temperature of -31°F (-35°C) or below for 15 hours, or freezing at an ambient temperature of -31°F (-35°C) or below until solid and storing at an ambient temperature of -4°F (-20°C) or below for 24 hours are sufficient to kill parasites."

Two caveats sit on those conditions and both bear directly on somebody at home with a fish and an intention to eat it raw.

THE FIRST IS THE GUIDANCE'S OWN. It states that the conditions "may not be suitable for freezing particularly large fish (e.g., thicker than 6 inches)". Fifteen centimetres of thickness is not exotic — it covers a great many of the fish somebody would want to eat raw, including most salmon, most large sea trout and any thick loin off a bigger fish. The reason is straightforward: the stated temperature is an AMBIENT one, and the centre of a thick fish reaches it slowly or not at all.

THE SECOND IS ARITHMETIC. A domestic freezer is designed to run at around −18 °C. The FDA's routes require −20 °C for seven days, or −35 °C for the shorter periods. So of three published routes, one is marginal in a home freezer and two require equipment a household does not own — and a freezer that is opened daily, is full, or is in an unheated garage in summer may not hold even the marginal one.

The honest conclusion is not that nobody should ever eat fish they caught raw. It is that doing so on the strength of "I froze it for a couple of days" is resting on a number that was never met. If raw preparation is the intention, the fish wants to be thin, the freeze wants to be long, and the freezer wants to be one whose actual temperature somebody has checked with a thermometer rather than assumed.

Why some fish and some waters show more of them

The parasites in question have life cycles running through several hosts, and a fish acquires them by eating something that carries them or, in the freshwater flukes, through the skin. So the load reflects diet and food web rather than water quality, and a fish from a clean, productive sea can carry more than one from a poorer one.

This is why predatory fish that eat other fish tend to carry more than plankton-feeders of the same size, why older and larger individuals of a species carry more than younger ones, and why the same species differs between regions. It is also why the FDA can note that aquaculture fish raised only on pelleted feed "apparently do not have the same parasite hazard" — the cycle is broken by the diet.

The practical upshot for an angler is that finding parasites in a big old cod is unremarkable and finding none in a small one is not evidence of anything. Neither observation says anything about the water, and neither is a reason to change where you fish.
