Storing, freezing and thawing a catch

Freezing stops bacterial growth and does not undo anything. What comes out is limited by what went in, and the two failure modes — texture damage and slow oxidation — have different causes and different fixes.

Fish thawed at room temperature or in warm water spends a prolonged period at temperatures that favour bacterial growth and, in susceptible species, histamine formation — a hazard that freezing did not remove and that thawing can reactivate. Neither cooking nor refreezing reverses it.

What reduces it: Thaw in a refrigerator, in a sealed bag, allowing enough time. Do not thaw on a worktop or in warm water. Do not refreeze thawed fish. Where a fish was frozen in doubtful condition, freezing has not improved it and thawing will not either.

Worse when:

  • Warm kitchens, or fish left to thaw overnight out of the fridge
  • Oily, dark-fleshed species susceptible to histamine formation
  • Large thick pieces, where the outside is warm long before the centre has thawed

The freezer is the most over-trusted appliance in catch handling. It preserves; it does not repair; and it does less to some hazards than almost anybody assumes.

WHAT FREEZING ACTUALLY DOES. It halts bacterial growth and slows enzyme activity and fat oxidation without stopping them. A fish frozen in poor condition thaws in poor condition. This is not a quibble: the FDA guidance records that the enzyme responsible for histamine "remains stable while in the frozen state and may be reactivated very rapidly after thawing", and that once histamine has formed "it cannot be eliminated by heat (including retorting) or freezing." Freezing is a pause button, and for one important hazard it is not even that.

WHAT IT DOES DO WELL IS KILL PARASITES, and that is covered in its own record because the conditions are specific and the numbers are quotable.

HOW LONG FRESH FISH KEEPS IS A QUESTION FISHINGHQ WILL NOT ANSWER WITH A NUMBER. It depends on species, fat content, whether it was gutted, how fast it was chilled and how cold the fridge actually runs — and any figure published without those is one somebody will apply to a fish it was never true of. The direction can be said: leaner keeps longer than oily, whole gutted longer than filleted, and everything keeps longer the colder and sooner it got there. FREEZER BURN IS DEHYDRATION, NOT BURNING. Moisture sublimes out of the surface of frozen flesh into the air of the freezer, leaving dry, greyish, tough patches. It is a packaging problem: air in contact with the fish is the cause, and excluding air is the fix. Wrapping tightly, glazing with a thin layer of ice, or vacuum packing all work.

BUT VACUUM PACKING IS NOT A UNIVERSAL GOOD. The FDA notes that a number of the bacteria that form histamine are facultative anaerobes, so "reduced oxygen packaging… should not be viewed as inhibitory to histamine formation". Removing oxygen suppresses the organisms that produce the obvious spoilage smells more than some of the ones that matter, which means a vacuum pack can be quieter about going wrong. It is excellent for freezer storage and is not a licence to keep fish longer in a fridge.

OILY FISH ARE THE SHORT-LIVED ONES IN A FREEZER, for the same reason they are short-lived everywhere: their fats oxidise, and oxidation continues slowly at domestic freezer temperatures. Mackerel and herring go rancid while cod is still fine, and rancidity is a flavour failure rather than a safety one.

THAW COLD AND SLOWLY. In the fridge, in a sealed bag, on a plate — not on a worktop, and not in warm water. The reason is the one the FDA gives about the histamine enzyme reactivating rapidly on thawing: a fish thawing at room temperature spends hours in exactly the temperature range everything else in this record is about avoiding. Refreezing thawed fish is a texture disaster and it also doubles the time spent in that range.

Why the texture changes, and what actually prevents it

Freezing damages fish texture through ice crystals rupturing cell walls, and the size of the crystals depends on how fast the freezing happened. Slow freezing gives large crystals and more damage; fast freezing gives small ones and less. This is the entire mechanism behind the reputation of commercially frozen-at-sea fish, which is frozen far faster than any domestic freezer manages.

The practical levers are unglamorous. Freeze in thin portions rather than in a single block, because a thick block freezes slowly all the way through. Do not overload the freezer at once, because the compartment warms and everything in it freezes more slowly. Get the fish cold in the fridge before it goes in, so the freezer is removing less heat.

And there is a lever that has nothing to do with the freezer: the condition of the fish going in. A fish that struggled to death, was never bled and sat warm has already had its muscle chemistry altered, and it thaws mushy however carefully it was frozen. Taking only what you will use, and the arithmetic nobody does

Almost every freezer belonging to somebody who fishes contains fish that will not be eaten. It is worth saying so plainly, because the ethical argument about taking fish is usually conducted as though the alternative to keeping a fish were wasting the opportunity, when the commonest actual outcome is wasting the fish.

The arithmetic is simple and rarely done. A bag of mackerel is more meals than most households eat in a fortnight. A large pike or a big carp is a great deal of fish and, in most fisheries, a breeding animal that took many years to grow. The question worth asking at the net is not whether the rules permit keeping it but how many meals are genuinely wanted this week.

This is also where the conservation and food-safety arguments coincide rather than conflict. Fewer fish kept means each one is chilled properly, processed promptly and eaten fresh, which is better handling as well as lighter pressure. The angler taking two mackerel is doing better on both counts than the one taking twenty and freezing eighteen.
