How fish smell and taste

Fish smell in water rather than air, at concentrations far below human thresholds, and many taste with structures spread across the body rather than only in the mouth.
Fish chemoreception is divided the same way ours is — smell and taste — but the boundary sits differently because both happen in the same medium.
Olfaction occurs in nasal rosettes, paired pits on the snout through which water flows. The sensitivity is extraordinary: salmon home to natal rivers on remembered chemical signatures, and sharks detect certain compounds at very low concentrations. This is distance sensing.
Taste is contact sensing, and in many fish it is not confined to the mouth. Catfish carry taste buds over much of the body surface and concentrated in the barbels, which is why a catfish can locate food in total darkness by touch and taste alone. Sturgeon locate buried prey with barbels and, separately, with electroreceptors.
For an angler the consequence is direct: in dark, turbid or deep water, scent does the work that sight cannot.
Why the medium matters
Scent in water disperses along currents rather than diffusing evenly, which means a scent trail is a physical structure in the water with a direction. A fish working upstream along it is following a gradient, and that is why bait fished up-current of a fish is a different proposition from bait fished down-current.
Dispersal also takes time and dilutes with distance, which sets a practical scale. Groundbait, chum and rubby-dubby all work by creating a sustained plume rather than a single pulse, and the sustained part is what allows a fish to work along it.
Temperature and flow change dispersal substantially. In still warm water a scent plume stays local; in a strong tide it becomes a long narrow corridor.

What this supports about bait, and what it does not
It supports the position that scent matters most where sight is unavailable: at night, in turbid water, at depth, and for species whose sensory apparatus is built around it. Catfish, sturgeon, eels, sharks and rays are all in that group, and static scented baits are the standard approach for every one of them.
It also supports the practice of not contaminating baits and hands with substances fish avoid, though the evidence for specific repellents is thinner than the confidence with which they are discussed.
What it does not support is the enormous commercial claim structure around bait additives and attractants. That a fish can detect a compound is not evidence that the compound increases catches, and FishingHQ labels manufacturer claims as manufacturer claims rather than absorbing them into the biology.
