A long, straight-shelled bivalve that burrows faster than a person can dig, taken by the salt trick and by hand at the bottom of a spring tide — and one of the few gathering fisheries with real skill in it.
Safety
Tides and being cut off — Can cause serious injury or death
Gathering happens on intertidal ground at low water, facing down, with attention on the beach rather than the sea. Flats and gullies flood from behind, and people have drowned on ground they walked out over an hour earlier.
What reduces it: Know the tide and the exit before starting, and set a time to leave rather than leaving when the bag is full. Do not gather alone on unfamiliar intertidal ground, and tell somebody where you are.
Encounters with marine life — Can cause serious injury or death
Filter feeding concentrates algal biotoxins and sewage-derived bacteria and viruses from the growing water. Contaminated animals look, smell and taste normal, and biotoxins survive cooking, freezing, smoking and pickling. Paralytic shellfish poisoning can be fatal.
What reduces it: Establish the current classification and closure status of the ground with the relevant food safety or environmental health authority before gathering. Treat unclassified or unmonitored ground as unknown rather than safe. No folk test detects this — not the R-in-the-month rule, not a silver spoon, and not whether a shell opens on cooking.

Razor shells are sharp enough to lacerate, and broken shells lie in the sand where hands are being pushed down after animals.
What reduces it: Handle whole animals across the flat of the shell rather than gripping the edges. Do not push a bare hand blindly into sand on ground where shells have been broken.

- Check the tide before you go and know your exit route. Being cut off is the commonest way a shore session becomes a rescue.
- Do not wade alone. Judge depth and flow from the bank first, and turn back sooner than feels necessary.

A razor clam looks like an old cut-throat razor: a long, narrow, straight-sided shell open at both ends, holding an animal that is mostly foot. That foot is a hydraulic burrowing machine. It probes downward, swells to anchor itself, and hauls the shell after it, and it does this faster than somebody with a spade can follow. A disturbed razor is gone.
That is why the fishery has technique in it where most gathering does not. The animals sit vertically just below the surface with the siphons at the top, showing as a keyhole-shaped depression in the sand at low water. Walking heavily across the ground makes them withdraw. The two established approaches — a small quantity of salt poured into the hole, which the animal responds to by rising, and a fast hand or a purpose-made spear at the moment it does — both depend on getting to it before it decides to go down.
They are worked at the bottom of a big spring tide, which puts the gatherer on ground that is uncovered for a short time and a long way from shore.

Exceptional: Shell lengths above 20 cm are recorded for the larger Ensis species. Size differs between the species gathered under this name, so a figure quoted without the species behind it is of limited use.
Lifecycle and reproduction
Planktonic larvae settle onto clean sand and burrow immediately. Growth is moderate and animals live several years, with the larger individuals being substantially older than their size suggests to anybody used to fish. Populations are patchy and strongly tied to specific ground — clean, firm, gently shelving sand at the low-water mark — and a bed that has been worked hard does not repopulate quickly because the larvae must arrive from elsewhere.
Sexes are separate, with external fertilisation in the water column in spring and summer. Larvae are planktonic for several weeks before settling. As with other bivalves, spawning leaves the animals in poorer condition, which affects eating quality and says nothing about safety.
Feeding and senses
A suspension feeder. The animal sits vertically with the siphons at the sediment surface, drawing water down and filtering phytoplankton and suspended matter across the gills, and withdrawing instantly at any disturbance.
No eyes. Extremely sensitive to vibration and pressure transmitted through the sand, which is the entire reason a heavy approach empties the ground and a careful one does not. The response to disturbance is immediate withdrawal and then rapid burrowing.
Through the year
Available whenever a low enough tide uncovers the ground, which in practice means the biggest spring tides. Condition follows the feeding and spawning cycle. Animals sit closer to the surface in warmer conditions and deeper in cold, which is why the same ground yields differently at different times of year.
Distribution
North-east Atlantic from Norway south to Iberia, including all around Britain and Ireland. Clean firm sand at and just below the low-water mark on gently shelving shores, with the animals living vertically in the top few tens of centimetres.

Why anglers care
Gathered for the table, and an outstanding sea bait — razor is among the most effective baits for bass, cod and flatfish, and is one of the reasons anglers work the same ground as gatherers. The tongue is tough enough to stay on a hook, which is unusual among shellfish baits.
Handling and returning

The window is short, the flood comes in over flat ground, and the temptation to stay for a few more is exactly how people are caught out. Establish the tide and the exit first, set a leaving time and keep it.
GATHERING: tread lightly — heavy footfall empties ground before you reach it. Look for the keyhole depression, apply a small quantity of salt, and take the animal when it rises. Do not dig for them; you will not win, and the hole is left behind either way. Salt used on the ground is salt introduced to it, so use a small amount rather than a bucket.
HANDLE THEM CAREFULLY. The shell edges are genuinely sharp — the name is not decorative — and a razor shell will cut a hand that grips it carelessly or reaches into sand where broken shells lie.
TAKE WHAT YOU WILL USE. The animals are patchy, tied to specific ground and slow to repopulate because recruitment depends on larvae arriving from elsewhere. A stretch cleared is a stretch that stays cleared for years.

Broadcast spawning into the water column, and a long drift before settlement
Razor clam reproduction follows the standard bivalve pattern and has one feature that matters for how a bed recovers from being worked.
THE MECHANISM. Sexes are separate, and gametes are released into the water column for external fertilisation in spring and summer. As with mussels, this is a numbers game — gametes must meet by chance — so spawning within a bed is synchronised and the quantities are very large.
THE LARVAL PERIOD IS LONG. Razor clam larvae are planktonic for several weeks before settling, which is considerably longer than many bivalves manage, and during that time they drift with the currents. That has two consequences worth drawing out.
FIRST, RECRUITMENT TO A BED IS NOT LOCAL. A worked bed is not restocked mainly by its own spawning; it is restocked by larvae that were produced somewhere upstream in the current system and happened to arrive. That means the health of a particular stretch of sand depends on populations the harvester never sees, and it means a bed can fail to recover despite being left alone, or recover unexpectedly, for reasons entirely outside it.
SECOND, SETTLEMENT IS HIGHLY VARIABLE. Weeks in the plankton is weeks of exposure to predation, dispersal and unfavourable conditions, so year-class strength swings enormously. A bed's population is a record of which years happened to work.
AND SPAWNING LEAVES THE ANIMALS IN POORER CONDITION, exactly as it does in mussels — thinner, more watery, less worth taking. That affects eating quality and says nothing whatever about safety. The safety questions for razor clams are the same ones that apply to every filter-feeding bivalve: the sanitary classification of the water they grew in, and current biotoxin monitoring for the harmful algal blooms whose toxins accumulate in the flesh, survive cooking, and cannot be detected by inspection. Neither of those follows a calendar, and neither is answered by a rule about months.
RAZOR CLAMS ARE ALSO SLOW-GROWING AND LONG-LIVED for a bivalve, which combines badly with variable recruitment: a bed depleted of large animals may take many years to rebuild even where larvae are arriving.

Measured along the shell, and a name that covers several different-sized animals
Razor clam size carries a complication that most quarry does not: the name covers more than one species, they do not reach the same size, and a figure quoted without the species behind it is close to meaningless.
THE MEASUREMENT IS SHELL LENGTH, ALONG THE LONG AXIS. A razor is a long narrow animal and length is the obvious dimension, but it is worth stating because minimum sizes are expressed in it and because a razor's shell frequently chips at the ends during extraction, which shortens the measurement.
SEVERAL SPECIES ARE GATHERED UNDER THE SAME NAME. The larger *Ensis* species reach appreciably greater lengths than the smaller ones, and which species is present varies by coast and by ground. This record's exceptional figure is graded unknown-confidence precisely because it spans that variation. An angler or gatherer comparing their catch to a quoted maximum should first establish which animal the maximum referred to.
GROWTH IS RAPID AND THE ANIMAL IS SHORT-LIVED BY BIVALVE STANDARDS, which means razor beds respond quickly to both good and bad years, and a bed stripped of its large animals can rebuild faster than a slow-growing bivalve bed would. That is a real difference from cockles or from the very slow-growing clams, and it changes how heavily a bed can be worked.
DEPTH IN THE SAND SCALES WITH SIZE, which is why the big ones are hard to get. A razor burrows using a muscular foot and can descend faster than a person can dig, and the larger the animal the deeper and faster it goes. The practical consequence is that hand gathering is size-selective in an unusual direction: the largest animals are the hardest to take, which is the opposite of most fisheries.
AND SIZE IS NOT A SAFETY INDICATOR. A vertical burrow in low-shore sand, and why they are only reachable a few days a year
Razor clams live in a habitat that is barely accessible, and the inaccessibility is the single most practical fact about them.
THE ANIMAL LIVES VERTICALLY IN CLEAN SAND, near the extreme low-water mark and below it. A razor sits head-down in a permanent burrow with its siphons at the surface, and it moves within that burrow rather than along the bed — down when disturbed, up to feed. The muscular foot that drives that movement is powerful enough to take the animal deeper than a person can dig, which is why razor gathering is a matter of surprising the animal rather than of excavating it.
WHICH PLACES THE HABITAT AT THE EDGE OF THE SHORE'S REACH. Razor beds sit low enough that they uncover only on the biggest spring tides, and even then briefly. That is a habitat fact with a direct practical consequence: the ground is genuinely available for a small number of hours in a small number of days each year, and everything about the activity follows from it. It is also why the beds tolerate hand gathering better than their accessibility suggests — most of the bed is never exposed at all.
THE SEDIMENT IS SPECIFIC. Razors need clean, well-sorted, fairly fine sand, stable enough to hold a deep vertical burrow. DENSITY AND ORIENTATION ARE PART OF THE HABITAT. The habitat is therefore readable from the surface, which is unusual among buried bivalves.

A season measured in tides rather than months
Razor clam seasonality is unlike any other quarry in this catalogue because the binding variable is not the animal's condition but whether the ground is exposed at all.
THE BEDS UNCOVER ONLY ON THE BIGGEST SPRING TIDES. Razors live at and below the extreme low-water mark, so the ground is accessible for a small number of hours on a small number of days each year — the largest spring tides, and then only briefly. That is a tidal calendar rather than a seasonal one, and it is the first thing anybody planning to gather them has to work out.
WHICH MEANS THE 'SEASON' IS REALLY A SEQUENCE OF WINDOWS scattered through the year, and the largest tides of the year cluster around the equinoxes. A gatherer thinks in terms of tide height and time of low water rather than in months.
WEATHER DECIDES WHETHER A WINDOW IS USABLE. A big spring tide with onshore wind and swell does not expose the ground as predicted, because wind and pressure raise water levels above the astronomical prediction. Calm settled weather on a large tide is the combination, and it does not arrive on schedule.
THE ANIMAL'S OWN CONDITION CYCLE IS SECONDARY AND STILL REAL. Razors build condition through the productive months and spawn in the warmer part of the year, after which they are thinner. That follows the same pattern as other bivalves and matters for quality rather than for access.
THE SUBTIDAL POPULATION HAS NO SEASON IN THIS SENSE at all — most razors live permanently below the tide, which is where commercial fisheries operate, and their seasonality is a matter of stock and regulation rather than exposure.
AND THE REGULATORY POSITION IS ENTIRELY SEPARATE FROM ALL OF IT.
