Why hooks straighten or open

A hook opens when the load through it exceeds what its wire can carry, and since the angler sets the load through drag, rod and line choice, an opened hook is usually a statement about the tackle rather than about the fish.
Hook wire has a yield point. Below it the hook returns to shape; above it the hook deforms permanently, and the gape opens until the hold releases.
Where the load comes from is the useful part. The fish supplies force, but the peak force through the hook is set by three things the angler chose: the drag setting, the rod's stiffness, and whether the line stretches.
DRAG. A drag that will not give line converts every surge into load at the hook. Increasing drag to shorten a fight is the commonest route to an opened hook.
ROD. A stiff rod transmits a surge; a rod with a soft tip absorbs part of it and delivers a lower peak. The same drag setting on two different rods produces different forces at the hook.
LINE. Monofilament stretches by a substantial fraction of its length and acts as a shock absorber along the whole line. Braid does not. Moving from mono to braid at an unchanged drag setting raises peak loads at the hook without changing anything the angler perceives.
Hook wire gauge is the fourth variable and the only one on the packet. A fine-wire hook penetrates more easily at low force and opens at lower force; a heavy-wire hook needs more force to set and carries more. That is a genuine trade, not a quality difference, and it is why the same pattern is sold in several gauges.
Where the load peaks, and it is not where people expect
The largest force through a hook is rarely during a steady run against a set drag. It is at the moments the drag cannot respond quickly enough: a lunge at the net, a fish turning against a locked-up rod at close range, a snagged fish pulled free, and the strike itself if the drag is tight.
That is why fish are so often lost at the net. The angler shortens the line, the rod has little bend left to give, the drag is at fishing tension rather than landing tension, and a short lunge delivers a spike far above anything the fish produced at range.
Backing the drag off as a fish comes in is the standard response and it is standard because the mechanics are straightforward.
Choosing gauge for the job rather than for reassurance
Heavier wire is not simply better. A heavy-wire hook requires more force to drive home, and where the fish has a soft mouth or the angler is fishing a soft rod at light drag, the hook may not set fully — producing a shallow hold that fails for an entirely different reason.
The match to aim at is a hook whose wire carries the load the tackle can actually apply, and no more. Fine wire with light drag and a soft rod is a coherent system. Heavy wire with heavy drag and a stiff rod is a coherent system. Fine wire with heavy drag is where hooks open, and heavy wire with light drag is where hooks fail to penetrate.
Treble hooks add a wrinkle: load can be carried by one point rather than three, so the effective gauge under load may be a third of what the assembly suggests.
The convention, stated as a convention
Setting drag at roughly a quarter to a third of the line's rated breaking strain is the widely used starting point across sea, game and big-game practice, and it exists partly to keep peak hook loads within what normal hooks carry.
It is convention rather than a measured optimum. It was arrived at independently in different traditions and it is expressed in the same terms in each, which is the reason FishingHQ records it as practitioner consensus and not as a specification.
