The conical teeth and pharyngeal plates are adapted to crush shellfish and will injure a finger placed in the mouth.
What reduces it: Never put fingers in the mouth. Use long pliers or a dehooker and control the fish across the body.
Tautog is a wrasse, and like many wrasses it does something odd at night: it wedges into a crevice and rests on its side, effectively dormant until dawn. Divers find them like this regularly.
By day it is a structure specialist — wrecks, rock, mussel beds and bridge pilings — where it crushes crabs, mussels and barnacles with heavy conical teeth and powerful pharyngeal jaws. It is stocky, blunt-headed, mottled dark, with thick rubbery lips.
It is exceptionally site-faithful, often remaining on the same small piece of structure for years, and it is very slow-growing and long-lived. Those two facts together are why local depletion is real and why the species is managed carefully.

Lifecycle and reproduction
Very slow-growing and long-lived, with fish recorded past thirty years, and extremely site-faithful — individuals may spend most of their adult lives on a single structure. That combination makes local populations easy to remove and slow to replace.
Spawns in spring and early summer in coastal waters, releasing pelagic eggs. Juveniles use eelgrass and shallow structure before recruiting to hard structure.
Feeding and senses
Crushes crabs, mussels, barnacles and other hard-shelled prey with conical and pharyngeal teeth, feeding directly on and around encrusted structure during daylight.

Through the year
Moves into shallower structure in spring and autumn and into deeper wrecks in winter, becoming largely inactive in the coldest water. Autumn is the classic season.

Why anglers care
A specialist American Atlantic structure fishery, fished with crab baits presented tight to wrecks and rock with heavy tackle and short leaders. Its significance is the technical difficulty — the bite is subtle, the fish must be turned from structure immediately, and tackle losses are constant — and its eating quality. Practitioner consensus is that green crab and white-legger crab baits substantially outfish alternatives.
Handling and returning
Powerful crushing jaws and a strong fish. Keep fingers well clear of the mouth, support the body, and use pliers. Given the extreme site fidelity and slow growth, returning large fish to the structure they came from matters more here than for most species.

Tautog have the same functional problem as sheepshead — a shellfish-crushing mouth — arranged differently, and a habitat that adds its own hazard.
THE DENTITION. Conical teeth at the front for gripping and a set of powerful pharyngeal grinding plates in the throat for crushing crabs and mussels. The bite force is considerable. A finger in the mouth is crushed rather than cut, and the pharyngeal plates are well back where nobody should be reaching in any case.
USE PLIERS AND EXPECT THE HOOK TO BE DEEP. Tautog take crab baits confidently and are frequently hooked well inside a small, hard mouth. This is a fishery where a hook that will not come out easily should be cut rather than worked.
THE FISH IS THICKLY SLIMED AND HARD TO HOLD, which is how people end up gripping the head. Use a wet cloth across the body.
THE HABITAT IS THE SECOND HAZARD. Tautog are fished over wrecks, rock and structure, frequently from boats close to hard ground, and often in cold weather. The fishing conditions injure more people than the fish does.
AND THEY ARE SLOW-GROWING AND SITE-ATTACHED, which is the conservation point: tautog do not move far, they take years to reach size, and a structure fished hard does not repopulate quickly from elsewhere. Size and bag limits on this species exist because of that, and releasing large fish carefully is worth more here than for a mobile species.
